Upconverted DVD -vs- HDDVD/BLURAY

I have an upconverter for DVD's to 1080P through HDMI.

How much better does HDDVD and BLURAY look compared to an upconverted DVD?

You can't bring out detail that isn't there in the source. A good upconverter can do wonders for your dvds, but it's just not the same ballpark as native HD. Grab a dvd-release and a hd-release of the same movie and decide for yourself.

It would help if you mention what kind of projection device you've got. I should think the difference should be glaringly obvious on something big, not so much if you've got something smaller than a 32".

i belive the 360 upconverts dvd´s to 1080p.
They look kinda pixelated on my 50 inch plasma

Watch the parade scene in the first Spiderman movie, before the green goblin attacks, in BRD then DVD. It's a great moment to tell the difference. There's just soooo much more color detail in HD, as well as the difference in resolution that is plainly evident too.
